WFPB Quinoa Taco "Meat" Vegan - Vegetarian
This is one of our family's favorite whole-food, plant based recipes! It has a delicious flavor and is so fast in the instant pot. It can also be simply cooked on the stove top if you don't have an instant pot. We normally double this recipe for our family of 8.
Quinoa Taco Meat
Place the following in an instant pot pressure cooker:
1 cup (184 g) tri-color, white, or red quinoa
1 cup (240 ml) vegetable broth
1/2 cup (180 ml) water
1/2 cup (128 g) salsa
1 Tbsp (3 g) nutritional yeast
2 tsp ground cumin
2 tsp ground chili powder
1/2 tsp garlic powder
1/2 tsp each sea salt and black pepper
Place the lid on the pressure cooker and close the pressure valve. Set the cooker to cook on high for 2 minutes. When the cook time is complete, either allow the cooker to fast or slow release.
Serve as a meat substitute for tacos or taco salad.
